Pink Beetroot Hummus with Pitta Bread.

100g canned chickpeas
1/2 lemon, sqeezed
1/2 garlic clove, crushed
1 cooked beetroot, quartered
80g tahini
1 tbsp water
1/2 tbsp extra virgin olive oil
1 tsp chilli
pitta bread or carrot sticks
salt to taste

I think I could live off hummus, with pitta or carrots; its delicious and simple to make. For a twist i decided to add beetroot and make it pink, if you don't like it with a kick i would suggest not adding chilli.

First drain the chickpeas and place in a food processor along with the lemon juice, crushed garlic, beetroot, salt, tahini, water, olive oil and chilli and blend until a lumpy consistency. Then simply place the hummus is a dish and heat up some pitta bread, slice and serve. Add more salt if needed.
