Oat, Spelt & Flax Seed Cookies

3/4 c flaxseed
3/4 c spelt flour
3/4 c rolled oats
3/4 tsp baking soda
1/3 c coconut oil
1/2 c sugar brown
1/3 c cranberries
1 free range egg
1/2 tsp vanilla essence

During our little road trip up to the Isle of Skye in Northern Scotland I made us some snacks for the car ride. Lunch consisted of baked butternut squash pieces sprinkled with ginger and served with varied nuts & dried fruit, Hummus with carrot & pepper sticks, fresh fruit, some slices of my Raw Chocolate Ganache (http://ashadeofmocha.blogspot.co.uk/2012/07/raw-cacao-tart-base-150g-mixture-of.html) and finally spelt flour, flaxseed and rolled oat cookies. It was the first time I was making them, and they turned out well, so I thought I would share.

First, mix your flour, oats, flaxseed and baking soda.
Heat the coconut oil until it softens, stir in the sugar, vanilla and egg and beat for a few minutes before adding your dry ingredients. Use an electric whisk to fully mix before folding in the cranberries and using a spoon to separate into eight equal parts. Place on to a greased baking tray and pat the mix into cookie shapes. 
Bake in a pre-heated oven at 180C for 10-15 mins. Remove and allow to cool.
