Ginger & Cranberry Baked Apples.

2 small-medium sized cooking apples
6 cranberries
1tbsp ginger peel
maple syrup

My mother always used to make these for me when I was young, they are great with custard, cream or ice cream.

Core both apples and place in a small baking dish, stuff the core with the cranberries and ginger peel, then drizzle a little maple syrup over. Pour half an inch of water into the base of the baking dish and place into a preheated oven at 180C for 20-25mins. Remove when golden and the skin is cracking and enjoy hot.
