Four Healthy Lunches.

With many on a health kick for the new year, I wanted to make four healthy fish-based lunchtime meals.

Mackerel, pak choi, watercress salad, roasted tomatoes & roasted butternut squash.

Egg fried brown rice, onion, tomato, red pepper, mushroom, sugar snap peas, smoked salmon & sweet chilli sauce.

Smoked Salmon with dill & mustard sauce, roasted chunks of tomato, onion & mushrooms, hummus, brown quinoa and red rice, salad & seeds.

Salmon, broccoli, string beans, brown rice, roasted tomatoes.
