Seven January Dishes.

I thought after December, now would be the perfect time to put together a series of healthy lunch type dishes to share.

Wheat berries, carrot, edamame beans, red quinoa, black turtle beans, roasted peanuts, broccoli, pumpkin seeds with rice wine vinegar dressing topped with avocado.

Roasted tomatoes and tender stem broccoli with fried eggs, avocado on a bed of rocket and spinach salad, topped with sunflower seeds and extra virgin olive oil, salt and pepper.

Rocket, toasted salmon and avocado topped with pine nuts, pepper and olive oil.

Watercress, pear, pomegranate, feta, toasted sweet potato, walnuts and seeds.

Watercress salad with strawberries, quinoa, apple topped with sesame seeds, walnuts and red wine vinaigrette dressing.

Edamame beans, broad beans, green pepper, sugar snap peas, mozzarella and sun-dried tomatoes topped with flaked oven roast salmon and chilli dressing.

Gnocchi, broccoli, fried mushrooms, fresh pesto, mozzarella, with roasted tomatoes and seasoned with salt and pepper.
