Four healthy dinner recipes.

In January I put together six healthy lunchtime salad dishes, now I have four of my favourite staple dinners to share.

Fried eggs, sweet potato mash with fried pak choi, roast cherry tomatoes and avocado, season with salt and pepper.

Gnocchi, fried asparagus & mushroom, mozzarella cheese and avocado, season with salt and pepper.

Quorn chicken oven baked with spinach and ricotta cheese, top with some grated mozzarella and paprika, sweet potato fries cooked without oil, fried pak choi and avocado, season with salt and pepper.

Savoury brown flour pancakes topped with flakey roasted salmon, mushrooms and a cream cheese sauce, made with a little milk flour, lemon pepper and feta cheese, roasted cherry tomatoes, salad and avocado, season with salt and pepper.
