Baked Rhubarb & Blackberries.

Slice the Rhubarb, sprinkle brown sugar on top and baked at 200C for 10-15mins until softened, then add thyme sprigs and blackberries, turn down the oven to 150C and bake for a further 5mins. Sprinkle cinnamon on top and serve with Madagascan Vanilla cream.
