Vegetable Curry.

1 medium sized sweet potato, chopped
100g string beans, chopped and ends removed
1 knob of organic butter
1tsp cumin seeds
1tsp coriander seeds
1-2tsp chilli paste
1tsp ginger paste
1tsp garlic paste
pinch of turmeric
pinch of cinnamon
1 red onion, diced
1 can of aduki beans, drained
4-5 chestnut mushrooms, chopped
2 tomatoes, chopped in half
1/2 carton of tomato passata
rice for four

Start by pre boiling the sweet potato and and string beans until almost done, then drain and set aside.
In a pot, on a medium heat, melt the butter and add the cumin and coriander seeds, fry until fragrant then add the rest of the spices and onions, cook until the onions have softened.
Put your rice on to boil in a separate pot. Add the remaining ingredients into the spice and onion pot and cook for 10 minutes.
Salt to taste

Serves 3-4
