Mushroom Pate. 

1tbsp butter
4 mushrooms, chopped
1/2 red onion, chopped
2 garlic cloves, chopped
2tsp wholegrain mustard
1tbsp cashew nuts
1tsp mix dried herbs
salt & pepper

In a pan on a medium heat, melt the butter and gently fry the mushrooms, onion and garlic until softened and starting to brown, then add the mustard, cashew nuts, herbs, stir well and fry for another 30 seconds. Add salt and pepper to taste then set aside to cool. Once cooled, place ingredients in a food processors and blend until you have a smooth consistency and place in a pot in the fridge to cool and harden. Serve on bread.
